Low-Fat Fruit Cobbler

Using Goodbaker Scruptious Scone Mix

Easy low-fat vegan fruit cobbler recipe: This healthy, fast and easy recipe uses only one bowl for easy clean-up. It’s the best-tasting way we’ve found to get a serving of fruit.


  • Your choice of fruit, fresh or frozen (apples, peaches, blueberries,
    plums, etc.)
  • Juice of 1/2 medium lemon
  • 1 or 2 Tablespoons sugar
  • 1/2 teaspoon and 1/4 teaspoon cinnamon
  • More coarse (demerera) sugar for topping
  • One 8x8 or 9x9 baking pan, or a pie plate or equivalent
  • 1 Goodbaker Scrumptious Scone Mix

  1. Preheat your oven to 400 degrees.
  2. Wash and prepare your fruit (peel, core and slice or cube the fruit, or rinse and pat dry the blueberries). If using frozen fruit, quick-thaw it by placing it under cool running water. An easy way to determine the amount of fruit you’ll need is to place the whole fresh or frozen fruit directly in your pan. When the pan is full, that’s how much you’ll need.
  3. If using apples, 4 apples usually fills an 8- or 9-inch square pan nicely.
  4. Place your prepared fruit in the baking pan (ungreased). Sprinkle with 1 or 2 Tablespoons of sugar, 1/2 teaspoon cinnamon, and the lemon juice. Toss to coat.
  5. Prepare the Goodbaker plain scone mix according to package directions, adding 1/4 teaspoon cinnamon before mixing.
  6. Using two forks, or clean fingers, crumble the prepared scone batter over the top of the fruit. Cover the fruit completely, but do not press down and flatten the crumbled topping. Sprinkle with coarse (demerera) sugar.
  7. Place in oven and reduce temperature to 350 degrees. Bake until the cobbler crust is golden. 25-35 minutes depending on your oven and amount of fruit. For easy clean-up, place your baking pan on top of a non-stick cookie tray to catch drips.
